Amsterdam Centrum is the city at full volume: the Dam and the Royal Palace, lanterns reflected in the Oudezijds Achterburgwal, the Nine Streets, the flower stalls, the endless bridges and the brown Amsterdammertjes bollards stamped with the three crosses of the city. Tiffany lives in the middle of all of it, and she would not have it any other way. Tourists see the postcard; Tiffany sees the detail, and she will show you both.

03 An evening plan

Out with Tiffany

Details come first with Tiffany, so her evening arrives with a shot list. Frame one: a leaning canal house reflected in the Herengracht at golden hour, taken from the exact spot on the bridge she scouted days ago. Frame two: the brass door knocker on a merchant's house that nobody else stops to notice. Frame three: the first rush of bubbles in a glass of champagne on a terrace facing the Amstel. She is graceful and playful, and she moves through the canal belt like someone who photographs it constantly.

When the light is gone, the camera goes into her bag and the evening moves to the bar of a design hotel she has been meaning to try, chosen for its lamps, its tiles and the texture of its chairs, all of which she will comment on. A little sequin sparkle catches the low light. Dinner is nearby, followed by a last look through the day's photos, deleting any that are only nearly perfect.

01Phone or proper camera?

A proper camera for the city, the phone for dinner. Food never waits for a lens change, and I would rather taste the dish than document it.

02What do you notice first in a design hotel?

The door handles. If someone thought carefully about those, they thought about everything. Most places fail that test before you reach the lobby.

03What do you raise a glass to?

Small things done well. A good photograph, a perfect pour, a bridge in exactly the right light.
